Program Overview

The recent explosion in food technology and the demand for gourmet, nutritious, safe, convenient, and economical foods has created a new career opportunity called Culinology®. Culinology® is a registered name of the Research Chef’s Association (RCA). Culinology® professionals define the future of food as they create high quality convenience foods with sensory appeal. Culinology® blends the training of a culinary arts chef with food science and nutrition education to form an exciting new field that is highly desirable as a career choice.

What kind of training will I receive at Allan Hancock College?

As a student of the Culinology® program at Allan Hancock College you will receive hands on training in our industrial kitchen. Our kitchen includes up to date commercial equipment that simulates working in a real restaurant.

As part of the Culinology® curriculum you will have the opportunity to gain direct experience in food preparation by baking items sold at the Starry Sky coffee house on campus.

The Culinology® degree program will train you in food science, nutrition, and culinary arts, simultaneously. Allan Hancock College strives to create an understanding and respect for the entire food continuum for optimum health and enjoyment.

Our chef, dietitian, food scientist, and health inspector instructors will share their real life experiences with you while they mentor, coach, and facilitate your learning.

Internships are available at Lido in the Dolphin Bay Resort, the Santa Maria Inn, the Radisson Hotel, and Root 246 in Solvang.

Why choose Culinology®?

The associate degree program at Allan Hancock College blends food science technology with culinary art and nutrition. The creative artist and the inquisitive scientist become one as culinary professionals lead the 21st Century culinary renaissance.

The associate in arts degree in Culinology® is transferable to Cal Poly, San Luis Obispo, for a four-year bachelor of science degree in food science with a culinary concentration which will meet most of the Research Chef Association Requirements. An upper division Food Science Internship is also required. Contact Cal Poly Food Science and Nutrition department for further information.  

Cal Poly has a food processing pilot plant and a food preparation laboratory. These and additional laboratories are designed for teaching courses in nutrition, food service management, sensory evaluation, functional components of food, and quality control, as well as other food processing systems. Multimedia and computer applications are emphasized.

Salaries can range from $45,000- $100,000 a year.
